However, after making and selling them for the past four years, I'm afraid my local market is saturated with fabric gift bags.

I found your post while searching for fabric gift bags. Oh, I love your ideas! As far as the wine bottle corset - can you find some yarn or twine that looks like grape vines? Perhaps something in the artificial floral dept. It would be keeping with the wine theme - and maybe easier to work with.
